Green Gram Stew (Ndengu Curry)

A beloved Kenyan vegetarian classic — Ndengu Curry is simple, nourishing, and packed with flavor. Tender green grams are simmered with tomatoes, onions, garlic, and a touch of spice, creating a wholesome stew that pairs perfectly with chapati, rice, or even ugali. It’s the kind of comfort food that warms both the stomach and the soul.

Ingredients
  • 2 cups Nature’s Pantry Green Grams, soaked overnight (or at least 4 hours)
  • 1 large onion, finely chopped
  • 3 ripe tomatoes, chopped (or 1 cup blended)
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced (optional but adds depth)
  • 2 tablespoons vegetable oil (or sunflower oil)
  • 1 teaspoon cumin seeds (or powder)
  • 1 teaspoon turmeric powder
  • 1 teaspoon curry powder (or garam masala)
  • 1 fresh chili (optional, for heat), chopped
  • 3 cups water or vegetable broth
  • Salt, to taste
  • Fresh coriander (cilantro), chopped, for garnish

Method
  • Prep the Green Grams

    • Drain the soaked green grams and rinse well. Set aside.

  • Build the Base

    • In a large pot, heat the oil over medium heat. Add the cumin seeds (or powder) and let them sizzle for a few seconds.

    • Add the onions and sauté until golden brown.

  • Add Aromatics

    • Stir in the garlic, ginger, and chili (if using). Cook for about 1 minute until fragrant.

  • Tomato & Spice Blend

    • Add the chopped tomatoes, turmeric, curry powder, and a pinch of salt. Stir well and cook until the tomatoes soften and the mixture thickens into a rich paste.

  • Simmer the Green Grams

    • Add the drained green grams and mix them into the tomato-spice base.

    • Pour in 3 cups of water or vegetable broth. Bring to a boil, then reduce the heat to low and cover.

    • Simmer for 30–40 minutes, stirring occasionally, until the green grams are tender.

  • Final Touch

    • Adjust seasoning with salt and a squeeze of fresh lemon if desired.

    • Garnish with chopped fresh coriander before serving.

  • With Chapati: Soft, flaky chapatis are the most popular pairing for this Kenyan classic.
